OK, a day late with the holiday, but here never the less. I hope you enjoyed the menu last week. We really enjoyed the Eating for Life Chicken Enchiladas from last week, they are always a winner! I just need to reel in my desire to have margaritas with them. Yes, I’m human too.
This week has 2 nights of leftovers because I know for me it will be a busy week.

Monday – Real Simple Cobb Salad with homemade Caesar dressing (my husband makes an amazing, garlic-packed Caesar dressing with less oil than the usual) and the adults use just the boiled egg whites.
Tuesday – Shrimp Jambalaya – my version of a Cooks Illustrated Chicken & Shrimp Jambalaya, but I omit the chicken and use 1/2 the Andouille when I want to lighten it up. Served with steamed green beans.
Wednesday – Healthy Turkey Spaghetti
Thursday – Leftovers
Friday – Real Simple Jerk Chicken with Black Beans & Pineapple with steamed broccoli
