Happy Monday! Here are meals for the week for my family, enjoy or tweak them as necessary.

Monday – Flank Steak Sandwiches – (adapted from Real Simple Magazine) I use flank steak and marinate it in soy sauce, garlic, ginger and balsamic vinegar. I also go light on the goat cheese and roast zucchini and slice it thin on the sandwiches.
Tuesday – Turkey Burgers (thin buns) with steamed broccoli and roasted small potatoes
Wednesday – Leftovers
Thursday – Single Crust Chicken Pot Pie (the Pioneer Woman) – I use fat-free greek yogurt (thinned with water) to thicken it instead of cream and I use reduced fat crescent rolls as the crust
Friday – American Turkey Goulash (Eating for Life)- easy and delicious!
Saturday – Beef & Broccoli (Cooks Illustrated)
