Darn those holidays! I get behind on my meal plans. I hope everyone enjoyed their Presidents Weekend. Here is this week’s menu a little late. Please enjoy or tweak them as necessary.

Tuesday – Lighter Chicken & Dumplings (Cooks Illustrated) – I use bone in chicken breasts instead of thighs. Side of steamed green beans.
Wednesday – Leftovers
Thursday – Roasted Steelhead Trout (from Costco) and steamed broccoli with wild rice.
Friday – Shrimp Jambalaya (Cooks Illustrated) – no chicken thighs and I found chicken Andouille sausage which isn’t as great as the real thing but it does the trick. Side of roasted asparagus.
Saturday – No clue yet! Probably another leftover night. Ahhh, I’ll be back on track next week…life, right?
