Weekly Meal Plan 2/16/15

Darn those holidays!  I get behind on my meal plans.  I hope everyone enjoyed their Presidents Weekend.  Here is this week’s menu a little late.  Please enjoy or tweak them as necessary.

Meal Plan 2/16/15turkey chili

Monday – Turkey Chili & Skillet Cornbread – great meals from the Pioneer Woman, but I use ground turkey for the chili instead of beef and cut the fritos when we have cornbread (small portions please)

Tuesday – Lighter Chicken & Dumplings (Cooks Illustrated) – I use bone in chicken breasts instead of thighs. Side of steamed green beans.

Wednesday Leftovers

Thursday  Roasted Steelhead Trout (from Costco) and steamed broccoli with wild rice.

FridayShrimp Jambalaya (Cooks Illustrated) – no chicken thighs and I found chicken Andouille sausage which isn’t as great as the real thing but it does the trick.  Side of roasted asparagus.

SaturdayNo clue yet!  Probably another leftover night.  Ahhh, I’ll be back on track next week…life, right?
