Are we there yet? To Spring I mean. I think all of us across the nation (maybe except Florida) are caught daydreaming of our toes in the sand and drinks in hand. I know I am! However, time flies anyway and I’m sure it won’t be long until we are complaining about the heat…I’m so ready for that day. Here are this week’s meals, please enjoy or tweak them as necessary.

Monday – Turkey Pita Pizzas (Eating for Life) – These are so easy! Simply brown the ground turkey with your choice of seasoning and let the kids top their own pizza on whole wheat pitas. Bake at 475 for 7 minutes
Tuesday – Beef & Broccoli (Cooks Illustrated)– this week I’m using pork tenderloin with this recipe, it’s a great substitute!
Wednesday – Chicken Fajitas with zesty corn & edamame side.
Thursday – Leftovers
Friday – Coconut Curry Shrimp (the Pioneer Woman) with green beans- You can easily do this with chicken if you don’t like shrimp. I added pineapple and used 1/2 the amount of coconut milk to lighten it up and it was still great.
Saturday – Healthy Turkey Spaghetti
