I was in Texas last week, did y’all have a healthy week without me? Did ya miss me? Ha! Well, here are meals for the week for my family. Please enjoy or tweak them as necessary.

Monday – Oven BBQ Chicken (Pioneer Woman, but use split breasts instead) with mashed potatoes & steamed broccoli
Tuesday – Roasted Steelhead Trout (from Costco) and edamame risotto. If risotto isn’t in your wheelhouse, then just add the edamame to steamed rice.
Wednesday – Leftovers
Thursday – Eating for Life Sloppy Joes
Friday – Eating for Life Shrimp Scampi with roasted asparagus
Saturday – Taco Night! Ground turkey & black bean soft tacos with toppings of your choice
