Meal Plan 9/2
Monday – Pineapple Curry Shrimp with a combo of chicken & steamed broccoli (the Pioneer Woman) – I still used 1/2 the amount of coconut milk to lighten it up and poured a bit of the pineapple juice in the sauce.
Tuesday – Chicken Enchiladas – (Eating for Life)
Wednesday – Leftovers
Thursday – Turkey Burgers with artichokes and roasted potatoes
Friday – Chicken Tortilla Soup (The Pioneer Woman)
Saturday – Leftovers
