Happy Monday! We are still enjoying BEAUTIFUL warmer weather here in Colorado so I’m not ready to pull out all the cold weather recipes just yet. Ease of preparation is always key as we are still in youth football season which adds to the business of our three kids.

Monday – Flank Steak Sandwiches – (adapted from Real Simple Magazine) I use flank steak and marinate it in soy sauce, garlic, ginger and balsamic vinegar. I also roast zucchini and slice it thin on the sandwiches.
Tuesday – Turkey Burgers with artichokes and roasted potatoes
Wednesday – Leftovers
Thursday – Single Crust Chicken Pot Pie (the Pioneer Woman) – I use fat-free greek yogurt to thicken it instead of cream and I use reduced fat crescent rolls as the crust
Friday – Turkey Goulash (Eating for Life)
Saturday – Leftovers or Night out
